I drink at least one glass of warm water with lemon every day, which is expensive and felt so wasteful, half a lemon per drink, all those rinds in the compost. It's just so healthy - a gentle boost to your liver every morning is an easy way to keep your immune system powered up.
A couple of years ago I started blending the whole lemon (except the seeds) and freezing them in cubes. So easy every morning! I bought over 60 pounds at my farmers market last year, so my freezer is full all year. Here's how: squeeze out the seeds into a strainer and blend the juice and whole fruit with a half a cup of water per lemon. That makes them pour nicely into the ice cube trays, and I add a drop or two of peppermint oil to cut the bitterness of the white pith. I add a drop of sacred frankincense per lemon also (fights cancer) and in the morning, add one cube to hot water and local honey. Yum! When fruit is abundant, I add other things - a little bit of rhubarb, grapefruit, strawberries or plums. Go easy on essential oils and tart fruit add ins, the warm lemon water is what your body really needs.
